Sausage Orzo

Who doesn’t love a good one-pan recipe? This sausage orzo which is based on easy gourmet by jackie’s Italian sausage orzo is very easy on time and effort but big on taste.

I highly recommend you to take a look at her site as she is a very talented cook who creates not only delicious but healthy recipes. Lots of them can be taken as inspiration if you want to cook a meal that is more on the lower end of the glycemic index scale.

To make it easy for me I used ingredients that were easily accessible. Everything I needed for this was available at Lidl. Have a try yourself and feel free to vary ingredients as per your liking. You’re more than welcome to leave any personal tips and recommendations in the comment section.

Ingredients:

  • 100g chestnut mushrooms (sliced)
  • 80g tenderstem broccoli (thinly sliced)
  • 2 stems of spring onions, green part only (sliced)
  • 2 cloves of garlic (minced)
  • 225g pork sausages (remove casing)
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • Red pepper flakes (to taste)
  • 1 cup orzo
  • 2 cups chicken broth
  • 1/3 cup Parmesan cheese, plus more for serving

How to make it:

  • Prepare the vegetables – clean and slice
  • Heat a medium-sized pan on medium to high heat
  • Add 1 tablespoon of olive oil and the sausages – cook until slightly brown, about 2-3 minutes
  • Add mushrooms and cook until caramelised, roughly 5-6 minutes
  • Add spring onions, minced garlic, and red chili flakes and give it a stir
  • Add orzo and 1 tablespoon of olive oil, give it a stir
  • Add the chicken broth and tenderstem broccoli as well as salt and pepper to taste
  • Bring to a boil and reduce temperature; simmer for 10-12 minutes
  • If too dry after roughly 8-10 minutes, add a little bit of water or chicken broth
  • Once orzo is fully cooked, add parmesan cheese, stir and cook for another 2 minutes
  • Serve with parmesan cheese & Enjoy
